HARIYALI KABABS
Kebab is a Middle Eastern dish of pieces of meat, fish, or
vegetables roasted or grilled on a skewer or spit originating in the Middle
East, and later adopted in Central Asia. In India kababs are loved by many. Hariyali
kababs are made by marinating the boneless chicken cubes in yoghurt, mint and
few other easily accessible ingredients. For best results marinate the chicken with
its masala for long hours, maximum 24 hours not more than that. Do not freeze
it, refrigerate it. Hariyali kabab is
quick and simple chicken recipe.
Preparation time 20mins
Marinate 3-12 hours
INGREDIENTS
Boneless chicken 1 kg
Coriander 1 cup
Mint ½ CUP
Thick yoghurt ½ cup
Green chili 3-4
Salt to taste
Ginger garlic paste 2 tsp
Garam masal ½ tsp (optional)
Oil or butter for greasing
Lemon juice 1 tbl sp
Extra Seasoning:
Capsicum ½ cup diced
Tomato ½ cup diced
Garnishing:
Chat masala
Chopped cabbage
METHOD
STEP 1: Grind together mint, coriander, ginger garlic
paste, and chili make a fine paste of it. Mix it with yoghurt, lemon juice and
salt, set aside for few mins.
STEP 2: Place the chicken in large bowl, and rub with the mixture.
Cover the lid and refrigerate for minimum 3 hour (for best results marinate for
8-10 hours).
STEP 3: Take Bamboo Skewer Stick, Apply some oil coating on
the skewer and arrange the chicken, onion and bell pepper alternatively. Spray
some oil on top of the arranged chicken. Now place them in a pre heated grill for about
12- 15mins each side or till they are cooked and coated with slight brown and
black spots.
STEP 4: Squeeze some lemon over the grilled chicken and
sprinkle some chat masala for that extra flavors. Garnish with finely chopped cabbage
and sliced lemon.
