GRILLED CHICKEN WITH HOT PERI -PERI SAUCE





 Grilled chicken with peri peri sauce is a spicy dish. It easy-to-follow Grilled Chicken with Peri Peri sauce recipe. First we grill the chicken on a bbq/charcoal grill (or under the broiler grill of your oven) then Coat them generously with the peri-peri sauce of your choice, over the chicken... The chicken needs to marinate for at least four hours before being grilled.

Preparation time 20 mins
Marinate 4-12 hours
Serves 2

INGREDIENTS
Chicken 250g (leg piece)
Ginger garlic paste 1 tsp
Red chili powder 1 tsp
Hung curd 1 tsp
Lemon juice 2tsp
Salt to taste
Peri-peri sauce 2tbl sp
Butter or oil 1tsp
Sliced bell peppers for garnishing

METHOD
STEP 1: Remove skin from chicken pieces, and cut slits into them lengthwise. Place in a shallow dish. Sprinkle both sides of chicken with salt and lemon juice. Set aside 20 minutes.
STEP 2: Take a small bowl combine yogurt, ginger garlic paste, butter salt and chili powder. Mix until smooth. Spread yogurt mixture over chicken. Cover, and refrigerate for 4-16 hours.
STEP 3: Preheat a grill to medium-high. Remove the chicken pieces from the marinade and place on the hot grill and cook for 10 to 14minutes on the first side. Turn, baste as needed, and cook on the second side for 10 to 14 minutes. Cook till the chicken is browned on all sides and tender.
STEP 4: Remove from grill and put the chicken in a plate. Pour hot peri peri sauce over it. Garnish it with sliced bell peppers.




KADAI PANEER




KADAI PANEER


Kadai paneer is a dish of cubed paneer combined with a spices, tomatoes and capsicums. Kadai Paneer is a very popular side dish that is usually served with chapathis or rotis. Kadai Paneer is a simply, mild spicy & flavorful dish.

Preparation time 20 mins
Serves 2

INGREDIENTS
Paneer cubes 150 gms
Capsicum ½ a cup (sliced)
Onion 1 small finely chopped
Tomato s 2 medium finely chopped
Oil 1 tbl spn
Butter 1 tsp
Garlic 2 pieces finely chopped
Ginger 1 and ½ inch long (grated)
Chili powder 1 tsp
Turmeric ½ a tsp
Coriander powder ½  tsp
Kasuri methi ½ tsp
Salt to taste

METHOD

STEP 1: Heat oil and butter in a pan add the ginger and garlic sauté for a min.

STEP 2: Add the chopped onions fry them until it turns golden.

STEP 3: Add the chopped tomato, capsicums, salt, chili powder, turmeric, coriander powder and kasuri meethi. Mix all the ingredients. Stir them well, add water is required. Cook them until the oil separates from the masala.

STEP 4: Once the masala is fine cooked add a cup of water, let it come to boil then add your paneer cubes. Cook until the paneer is moist. Turn off the flame ,garnish  it with some lemon slices .Serve hot with rotis.




CHILI CHICKEN (Indo-chinese style)





Chili Chicken is an absolutely delicious recipe of boneless Chicken with Indo-Chinese ingredients. Though mainly boneless chicken is used in this dish, some people also recommend using boned chicken too. This hot and spicy chicken recipe is very easy to cook, takes very less time in making. Lets go ahead with the recipe.


Preparation time 20 mins

Serves 2-3


INGREDIENTS

Chicken 300 gms
Onion large 1 (finely chopped)
Green chili 2 chopped
Tomato sauce2 tsp
Green chili sauce 1 tsp
Soya sauce ½ tsp
Ginger garlic past ¾ tsp
Oil 3 tbl sp
Capsicum diced ½ cup (fried in oil for a min)
Salt to taste
Red chili powder ¾ tsp
Permitted color ¼ tsp

METHOD

STEP 1: Mix green chili sauce, tomato sauce, soya sauce, and chopped green chili in a small bowl and keep aside.


STEP 2: Heat oil in a sauce pan, add the chopped onions,  fry them until they turn golden.


STEP 3: Add ginger garlic paste to the fried onions then add chicken pieces to it. Sauté it for  2 mins.

STEP 4: Add the mixed sauce with green chili to the chicken. Now add red chili powder, permitted color and salt. Once the chicken gets nicely coated with the sauces, add water as required. Cover the lid. Let it cook for about 5-10 mins.


STEP 5: Lastly add the fried capsicum. Sauté for few mins. Your tasty, tangy chili chicken is ready.




MUTTON CHILI FRY(LAL MIRCH KA GOSH)


Mutton chili fry comes with fine spicy flavors’ Fried –coconut, dry chili with mutton chops-simply tempts your taste buds. This can be prepared in 20 mins. Don’t hesitate to try it and post your comments.

COOKING TIME 20 MINS

INGREDIENTS

MUTTON CHOPS 8 (or you can use 250 gms of mutton pieces)

GINGER GARLIC PASTE 1 ½ TSP

DRY RED CHILLI 2-3

GARLIC 3

COCONUT ½ CUP (SLICED)

OIL 2 TBL SP

GHEE 1 TSP

SALT TO TASTE

TURMERIC ½ TSP

METHOD

STEP 1: Heat 1 tbl sp oil in a pressure pan, add the washed mutton chops, turmeric, salt and ginger garlic paste. Add required water. Close the pressure pan and pressure cook for 10 mins (do not overcook it).


STEP 2: Fry the sliced coconut, dry red chili and garlic separately. Set aside.


STEP 3: Grind fried coconut, dry red chili and garlic together. Make a mixture of it.


STEP 4: Add the above mixture to cooked mutton chops. Now add ghee over it. Mix them very well. Sauté it for 3-4 mins. Your mutton chili fry is ready to serve.
