GRILLED MUTTON CHOPS




Looking for grilling recipes?  Grilled mutton chops is one of the easiest grilling recipe u would have ever seen. Its got very few ingredients and very easy to cook.


INGREDIENTS


MUTTON CHOPS 6
GINGER GARLIC PASTE 1 ½ TSP
CHILI POWDER 1 TSP
CORIANDER ½ CUP
RAW PAPAYA PASTE 1 TSPN
SALT TO TASTE
OIL 1 TSPN
CHAT MASALA ½ TSPN
LEMON ½


METHOD


STEP 1: Grind the coriander leaves, ginger garlic paste, papaya paste, chili powder and salt. Make a paste of it, add lemon juice to this mix and set aside for 5-10 mins.

STEP 2: Add the chops to this paste and mix it well. Marinate it for 6-7 hours.

STEP 3: Place the marinated chops over the grilling pan. Cook it for around 15 mins each side (until the chops are nicely cooked).

STEP 4: Sprinkle chat masala over it and serve hot with some salad (sliced capsicum, lemon and sliced carrot).


KORMA (MUTTON CURRY)





Preparation time 15 mins

Cooking time 30 mins

INGREDIENTS


Mutton 250 gms
Onion 1 med size (slice as finely as possibleslice as fine as possible)
Tomato 2 small
Yoghurt 4 tsp
Oil 4 tbl spn
Ghee 1 tsp
Coconut paste 4 tsp
Coriander leaves ½ cup(chopped )
Green chili 2
Mint leaves ½ cup(chopped)
Ginger and garlic  paste 1 tsp
Garam masala:
Cinnamon stick 1 inch long
Cardamom 2
Cloves 2
Chili powder 1tsp
Coriander powder 1tsp
Turmeric powder ½ tsp
Salt to taste


METHOD


STEP 1: Heat oil in a pan, add cinnamon, cardamom, cloves, fry them for few seconds. Then add the sliced onions and ghee, fry them until they turn golden.

STEP 2: Add chopped coriander, mint leaves, green chili, ginger garlic paste, fry them for a min. Add turmeric and mutton to it, again sauté it very well (bhunna) for few mins .

STEP 3: Now add diced tomatoes, yoghurt, chili powder, coriander powder and coconut paste. Stirring the mutton constantly with the ingredients gives you the best results. Now cover the lid and leave for 5 mins (let the mutton cook in its own juice).

STEP 4: Once the oil separates from the mutton, add 2 cup of water and cook until the mutton is tender. Garnish it with coriander leaves. Hot and spicy mutton korma is ready.

VEGTABLE BIRIYANI



Vegetable Biryani is a rich and exotic rice dish with Indian spices and  vegetables. Full of fresh Indian flavors, it is quick and easy to make. This recipe is my all time favorites. It is healthy for kids as it is rich in carbohydrates and of course we add lot of veggies to it. I personally think this dish is one of the way to give lot of veggies to kids. So let’s get on with our recipe.

Serves 3

INGREDIENTS


Basmati rice 250 gms
Onions 1 large (finely sliced) 
Tomato 1(diced)
Coriander leaves ½ cup
Mint leaves ½ cup
Yoghurt 4 tspn
Green chili 2
Ginger garlic paste 1 ½ t spn
Chili powder 1tsp
Cinnamon stick I inch long
Cloves 2-3
Cardamoms 2
Saffron 1 pinch
Lemon juice 1 tspn
Salt to taste
Vegetables :
Carrot ¾ cup (inch pieces)
Beans ½ cup(inch pieces)
Potato 1
Peas  ½ cup
Cabbage ½ cup


METHOD


For the gravy:

STEP 1: Chop all the veggies and keep aside. Slice the onions as fine as possible.
STEP 2: Heat oil in a pan, add cinnamon stick, cloves and cardamom,  fry them for a min. Add sliced onions fry them until they turn golden.


STEP 3: Now add coriander, chilis, mint leaves, salt, ginger garlic paste, and over it add the washed veggies stir all of them together. Cook for 2-3 mins.
STEP 4: Add tomato, yoghurt and chili powder. Stir them for 2-3 mins.
STEP 5: Add 1 glass of water, cover the lid, cook until the veggies are done.(do not make the gravy too dry)
STEP 6: Finally add 1 tspn of lemon juice and set aside.

Rice:

STEP 1: Take large container of ½ kg capacity. Add ¾ portion of water and set it for boiling.
STEP 2: When the water starts boiling add the soaked basmati rice and salt. When the rice is half cooked, strain the water. Add this half cooked rice to the gravy, pour the saffron water and mix the gravy with rice very well. Cover the lid tightly and leave it on a low flame for 5-10 mins.
Garnish it with fried onions and coriander leaves. Your vegetable biryani is ready to serve.

SPICY GRILLED CHICKEN

INGREDIENTS


Chicken 500 gms
Ginger garlic paste 2 tsp  
Chili powder 11/2 tsp
Coriander leaves ¾ cup 
Garam masala1/2 tsp 
Butter 1 tspn
HUNG YOGURT 2TBL SPN (hang curd in a muslin cloth and let the whey or the liquid drain completely)
Lime and salt as required
Permitted color ¼ tsp(red)
Chat masala
Onion rings for garnishing
METHOD


STEP 1: Wash the chicken and make fine and deep slits on chicken. Apply lime and salt. Keep aside for 15 mins.

STEP 2:  Grind ginger garlic paste, curd, chili powder, coriander leaves and salt in mixer.

STEP 3: Marinate the chicken with the above mixture, add color and garam masala .Keep aside for at least 2 hours.

STEP 4: Apply 1 tsp of butter on the marinated chicken and roast it in the grill until done.(it take around 15 mins each side to cook).Sprinkle chat masala and garnish it with onion rings.
