HAREES





Harees is a traditional United Arab Emirates recipe for a classic soup of lamb and whole wheat served with a garnish of spiced clarified butter. In this recipe we are going to give this authentic Arabian dish an Indian tadka. Although it is a time consuming process, It is a very nutritious and tasty dish to be served. 


In Qatar we bring home these cooked harees from restaurants and we give it a desi tadka with onions, chili, and yoghurt and few other ingredients. After a long time I have tried this harees at home and results are excellent and I am very glad to share this recipe with you all. Hope you like and do send in your feedback's.


I am going to make lamb harees you can also use chicken. For best result soak the wheat overnight


INGREDIENTS

¾ Cup harees ((wheat berries) soaked overnight or for at least 8 hours.

½ cup of lamb (mutton) 250 gms

2 sticks of cinnamon

Butter 1 tbl sp

Salt to taste


You can serve harees as it is, by just adding salt and pepper or if you want you can give it a desi tadka.


For tempering (tadka)

Onion 1 small

Green chili 2 chopped

Coriander ½ cup

Ginger garlic paste 1tsp

Yoghurt 3-4 tsp

Olive oil 1 tbl sp

Salt to taste

Lemon juice 1 tbl sp


METHOD

STEP 1: Combine the lamb, soaked wheat and 500ml (or as required) water in a pan. Bring to a boil, reduce to a low simmer and cook for 2 hours, stirring occasionally. & skim-off froth or fat on the surface. Cook until the wheat is soft and lamb starts shredding. 

STEP 2: Once the wheat is very soft, well cooked & has lost its shape & most of the water has been absorbed, remove from heat & allow cooling a little, and then remove any bones & grissle. The consistency should be thick not watery.



STEP 3: Now begin whipping the wheat & meat using large wooden spoon, or pound it with a wooden rolling pin to get the desired consistency. You can also use pulse it in a food processor or use an immersion blender.


STEP 4: Heat clarified butter in a pan, add cinnamon and salt according to taste. Pour the resultant mixture over the lamb soup and serve immediately.



For tempering;

Heat oil in pan add chopped onions, fry them till they turn transparent or light golden.



Add chopped green chilli, ginger garlic paste, coriander leaves, and yoghurt. Combine all ingredients and cook for 5 mins until the raw smell is gone and oil starts separating from the whole mixture.





Now add the cooked harees  to the mixture .Mix it well .Turn off the flame Squeeze lemon juice and garnish with some coriander leaves and red chilli powder
















ZAFRANI CHAWAL (SAFFRON RICE)






Saffron rice is a dish made from saffron, white rice. Saffron rice is found in the cuisines of many countries. Saffron rice makes dinner extra special, and is nearly as easy to make as regular rice. So let’s start with our recipe.


Preparation time 10-15 mins

Serves 3


INGREDIENTS

Basmati rice 1 1/2 cup (wash and soak for half an hour)

Oil 1 tsp

Ghee 1 tsp

Onion ½ medium sizes (finely sliced)

Ginger garlic paste 1 tsp

Mint leaves 7-8

Green chili 2

Cinnamon stick 1 inch long

Saffron 1 pinch (soaked in 2tbl sp water)

Salt to taste


METHOD

STEP 1: Heat oil and ghee in a pan (kadia), add cinnamon stick. Let it splutter

STEP 2: Add sliced onions, fry them until they turn golden. Now add ginger garlic paste, mint leaves, salt and chili. Mix them all; stir them until the raw smell goes.

STEP 3: Add water to the mixture (3 cup of water)

STEP 4: Now you should put in the soaked  rice and mix well. . To this add the soaked saffron and mix nicely.

STEP 5: Cover the pan now and cook till rice is done nicely but remember that each grain of rice should be separate and not mashed.


STEP 6: Garnish with fresh coriander.


CHICKEN FRIED RICE



CHICKEN FRIED RICE


Fried rice is made from steamed rice stir-fried in a wok, often mixed with other ingredients, such as eggs, vegetables. Fried rice is most of the time considered a greasy dish, not very healthy, but it can be made with very less oil and without over cooking the veggies. It can be a healthy yet tasty dish. This Quick and Easy Chicken Fried Rice Recipe is just what you need.


INGREDIENTS

Rice (Basmati rice) 2 cups

Oil 2 tbls sp

Soya sauce 1 tsp

Chili sauce 1 tsp

Pepper 1tsp

Carrot ½ cup finely chopped

Beans 2 tbl sp

Spring onions 2 tbl sp (green leaves 1 tbl sp)

Boiled and shredded chicken 2 tbl sp

1 Egg white scrambled

Capsicum 1 tbl sp

Salt to taste











METHOD


STEP 1: Heat oil in a pan add the sliced spring onions saute
it for a min.


STEP 2: Add the shredded chicken saute for few seconds, do not overcook it.


STEP 3: Add chopped carrots, scrambled egg and beans sauté for some time. Now add soya sauce, chili sauce, salt and pepper powder. Mix all the ingredients finely. Saute for 1 or 2mins.Finally add diced capsicum and spring onions. Add a very little water for the veggies to be cooked.


STEP 4: Now that our veggies our cooked, turn off the stove set aside. On the other side take a large container fill ¾ portion of it with water and add1 tbl sp oil.Set the water for boiling, now add the soaked rice and cook it until the rice is ¾% cooked, strain the rice and keep aside.

STEP 5:Add the cooked rice with the veggies, mix them well. Cover the lid lightly. Cook on a very low heat flame for 5- 7 mins. Garnish it with some spring onions, your chicken fried rice is ready to serve.
