Kheer is a rice based dessert. It is prepared and eaten on almost every festival. The dish is consumed at Muslim weddings and prepared on the feasts of Eid ul-Fitr and Eid ul-Adha. A similar dessert, variously called fir-ni, phir-ni, is eaten among the Muslim community of North India, and also in Pakistan.

Serves : 4-5 bowl
INGREDIENTS :
- Basmati rice - 1/2 cup
- Milk - ½ ltr
- Sugar - ½ cup(add more if wanted)
- Almonds - 1 cup (soaked in water for 1-2 hours)
- Ghee - 2 tbl spoon
- Cardamon - 2-4
- Saffron - 1-2 pinch
- Cashew - 8-10 (soaked in water)
STEP 1 - Grind the basmati rice roughly then wash it and soak it for ½ an hour.
STEP 2 - Remove the skin of the almonds and grind them in to a smooth paste.
STEP 3 - Heat ghee in a pan and add cardamon to it (crush them a bit before adding).
STEP 4 - Add milk to the ghee and let it boil.
STEP 5 - Now add the rice to it and let it cook well.
STEP 6 - Add sugar, almond paste and cook all together till the raw smell is gone.
STEP 7 - Garnish it with sliced cashew and saffron.
