KADAI PANEER


Kadai paneer is a dish of cubed paneer combined with a spices, tomatoes and capsicums. Kadai Paneer is a very popular side dish that is usually served with chapathis or rotis. Kadai Paneer is a simply, mild spicy & flavorful dish.

Preparation time 20 mins
Serves 2

INGREDIENTS
Paneer cubes 150 gms
Capsicum ½ a cup (sliced)
Onion 1 small finely chopped
Tomato s 2 medium finely chopped
Oil 1 tbl spn
Butter 1 tsp
Garlic 2 pieces finely chopped
Ginger 1 and ½ inch long (grated)
Chili powder 1 tsp
Turmeric ½ a tsp
Coriander powder ½  tsp
Kasuri methi ½ tsp
Salt to taste

METHOD

STEP 1: Heat oil and butter in a pan add the ginger and garlic sauté for a min.

STEP 2: Add the chopped onions fry them until it turns golden.

STEP 3: Add the chopped tomato, capsicums, salt, chili powder, turmeric, coriander powder and kasuri meethi. Mix all the ingredients. Stir them well, add water is required. Cook them until the oil separates from the masala.

STEP 4: Once the masala is fine cooked add a cup of water, let it come to boil then add your paneer cubes. Cook until the paneer is moist. Turn off the flame ,garnish  it with some lemon slices .Serve hot with rotis.




CHICKEN FRIED RICE



CHICKEN FRIED RICE


Fried rice is made from steamed rice stir-fried in a wok, often mixed with other ingredients, such as eggs, vegetables. Fried rice is most of the time considered a greasy dish, not very healthy, but it can be made with very less oil and without over cooking the veggies. It can be a healthy yet tasty dish. This Quick and Easy Chicken Fried Rice Recipe is just what you need.


INGREDIENTS

Rice (Basmati rice) 2 cups

Oil 2 tbls sp

Soya sauce 1 tsp

Chili sauce 1 tsp

Pepper 1tsp

Carrot ½ cup finely chopped

Beans 2 tbl sp

Spring onions 2 tbl sp (green leaves 1 tbl sp)

Boiled and shredded chicken 2 tbl sp

1 Egg white scrambled

Capsicum 1 tbl sp

Salt to taste











METHOD


STEP 1: Heat oil in a pan add the sliced spring onions saute
it for a min.


STEP 2: Add the shredded chicken saute for few seconds, do not overcook it.


STEP 3: Add chopped carrots, scrambled egg and beans sauté for some time. Now add soya sauce, chili sauce, salt and pepper powder. Mix all the ingredients finely. Saute for 1 or 2mins.Finally add diced capsicum and spring onions. Add a very little water for the veggies to be cooked.


STEP 4: Now that our veggies our cooked, turn off the stove set aside. On the other side take a large container fill ¾ portion of it with water and add1 tbl sp oil.Set the water for boiling, now add the soaked rice and cook it until the rice is ¾% cooked, strain the rice and keep aside.

STEP 5:Add the cooked rice with the veggies, mix them well. Cover the lid lightly. Cook on a very low heat flame for 5- 7 mins. Garnish it with some spring onions, your chicken fried rice is ready to serve.




MACARONI (Indian style)



MASALA MACRONI (Macaroni in Indian style)


Macaroni is a variety of dry pasta made with durum wheat. Masala macaroni is a mouthwatering pasta recipe cooked in traditional Indian way with lot of spices, yoghurt, and many other common Indian ingredients. It is after all not that hard to rustle up exotic spicy macaroni with all Indian style. I am sharing the simple and old macaroni recipe that we use to enjoy during my childhood.

Preparation time 15- 20 mins
Cooking time 20-30 mins
Serves 4

INGREDIENTS

Macaroni 2 cup
Onion medium size 1 (finely sliced)
Tomato 1 large (diced)
Oil 2 tbl sp
Cinnamon stick 1 (1 inch long)
Yoghurt 4 tsp
Coconut paste 1 tsp
Mint leaves ½ cup
Coriander leaves ½ cup
Ginger garlic paste 1tsp
Green chili 1
Chili powder 1 tsp
Coriander powder ¾ tsp
Turmeric ½ tsp
Salt to taste

METHOD

STEP 1: Heat oil in pressure pan add cinnamon stick, sauté it for a min.
STEP 2: Add sliced onions, fry them until they turn golden.

STEP 3: Add the chopped mint and coriander leaves. Add the green chili and ginger garlic paste, sauté it for a min.

STEP 4: Add the diced tomato s, cook for 2 mins .Now add yoghurt, coconut paste, chili powder, coriander powder, turmeric powder and salt. Cook all the ingredients until the oil separates from the masala.

STEP 5: Add 2-3 cup or as required water to the masala.Let that water boil then add your macaroni, mix it well. Cover the pressure pan with its lid. Cook for 10 mins or until it’s done. (it takes about 2 whistle to cook).

STEP 6: After that remove from heat, Once the steam suppresses, run it in cold water and fluff carefully. This method works out good only for Indian made pasta. Your masala macaroni is ready to serve.
